I love playing around with cooked grains and beans and tossing them together into a salad in the morning to have either for or with dinner that night. This is one of those impromptu salads that I not only especially liked, but actually jotted down what I was putting into it, so I can actually share it! The only cooking involved is the barley, so now that we’ve jumped right from winter to summer here in New England, no need to heat up your kitchen cooking dinner in the oven. The barley can be cooked either the night before or that morning, and the salad is great served either at room temperature or chilled. My homemade version … all they’re missing is the French fries and a surprise toy alongside them!
I admit it – I love a VERY occasional stop at McDonald’s. I can’t remember the last time I indulged in one, but growing up? The closest one was a half-hour away, so it was a HUGE treat, and I would get very excited about those “chicken” nuggets with some honey for dipping. My kids ended up feeling the same way about them (albeit with many more locations nearby), so when I asked (desperately) a few years back, “If you could choose anything for dinner, other than pizza, that is a healthy meal, what would it be?” and they replied, “McDonald’s!” well. ...
